Mmmeatball Subs

Tired of reading an autobiography when all you want to do is eat?

Pro-tip: Making meatballs can be time consuming but it is actually pretty easy, and totally pays off in the end. Use my recipe for homemade meatballs for a super special sandwich, or feel free to use frozen meatballs from the grocery store. I won't be offended!

Ingredients

1 baguette or hoagie roll
1-2 T olive oil
​4-5 meatballs
1/2 cup of your favorite spaghetti sauce
3-4 slices of Provolone cheese
2 T grated Parmesan cheese
1 tsp Italian seasoning
​Banana peppers (optional)

Directions

1. Preheat oven to 400°F. Line a baking sheet with aluminum foil.

2. Brush exterior of baguette or hoagie roll with olive oil using a basting brush, concentrating on the ends of the bread. This will help your bread brown nicely, and prevent the ends of the bread from burning during baking.

3. Open the bread and pile the pre-heated meatballs onto the bottom half. Add extra spaghetti sauce to top half of bread and on top of meatballs. Top with sliced Provolone and Italian seasoning. Add banana peppers, if desired.
(Pro-tip: Something about vinegary banana peppers goes really well with sweeter spaghetti sauce. While not totally necessary, I find banana peppers makes the sandwich extra delish.)

4. Bake for 10-12 minutes, or until cheese begins to bubble. Sprinkle with grated Parmesan cheese, serve with a side of marinara, and enjoy!!

Yield: 1 sandwich, or 2 small sandwiches if you are super nice :)

Pro-tip: You can add any kind of toppings you want to this sandwich, not just banana peppers. Try adding sauteed mushrooms, sliced olives, pickles, diced onions, jalapenos, etc. Whatever your heart desires!!
